Here's some digital camera history: Digital cameras have been plagued with color cast problems (usually a brownish/orangish tint) since their inception. Camera manufacturers, being aware of this problem, have tried to solve it by including white balance features in their software. Seeing that these settings weren't as precise as professional photographers would like, they created the custom white balance feature. Using white or gray cards with the custom white balance feature helped. There were problems associated with that though. The cards had to be tilted in the light just right. The camera has to be a specific distance from the card. Shadows on the card produce inconsistent results. Inconsistencies in the printing of gray cards causes problems. They even have to be included in the image to tell the printer what gray looks like then cropped out before printing. Now there's the WAFFLE! Camera manufacturers WB settings only give a good approximation of specific light spectrums. The waffle gathers light through the prismatic prefilter and diffuses it across the secondary filter allowing you to photograph the actual spectrum (balance) of light at the location that you're shooting at. This is especially useful when photographing in situations where you have mixed lighting (i.e. tungsten and fluorescent). Using that image as the custom WB tells the camera that 'gray is gray' in that particular lighting environment. The camera software then makes the proper color adjustments to the image saving you considerable amounts of time in photo editing software.
